Oh dear. Another blunder. PILAU (9 across) is not Spanish. At least it’s based on a broth, if not actually a broth itself. I was of course thinking of paella.
Pilau, also known as pilaf, peleau and plov, is a dish of Persian origin. It consists, Wikipedia tells me, of rice cooked in a broth along with various other ingredients. Wikipedia deals with it extensively but prefers to call it pilaf.
I do hope it’s as well known as paella.
I imagine and of course hope that this clue, even with the false lead, was not too hard. Nevertheless and naturally it carries my sincere and humble apologies. In the shadow of it I feel extremely disinclined to pontificate on any other matters cruciverbal this week. No appetite for it.
