Claudia Roden, one of the most respected cookbook authors in the English-speaking world, has a significant new book out. The Food of Spain: A Celebration (Penguin, $60) took her five years towrite, such is her scholarly approach to research and recipe checking. It follows other authoritative works, including the award-winning The Book of Jewish Food (Knopf, 1996), which took 16 years, and books on Middle Eastern, Mediterranean and Italian cuisines.
