My heart turns to France this week as Bastille Day (July 14) is imminent. I have great memories of living and working in France as a young cook in the British Embassy, and I adore French cuisine. But most of all I’m in love with Paris’s traditional brasseries, where mountains of oysters pile up outside on trays beside the pavement and waiters in floor-length aprons collect them from oyster shuckers.
