Pork recipes are missing from many cooks’ repertoires. Some are afraid to tackle it for fear of either undercooking or overcooking the meat. Overcooking results in tough, dry grey meat that can be almost tasteless, and no one enjoys a meal that requires more chewing than should be necessary.
