The roast meal is one of our great traditions. A large joint of meat or a whole bird slowly oven-roasted, surrounded by crisp spuds and other vegetables, is probably the ultimate comfort food. Cooking a roast isn’t difficult. Whether it’s a leg of lamb, a shoulder or belly of pork, a large juicy chicken or a handsome chunk of beef, all that’s required is a little fat or oil to rub over the surface, salt and pepper and basic flavourings such as herbs, lemons or garlic.
