No meal is complete without a generous serving of greens. Year round there’s a seasonal green vege to provide balance, colour and harmony to my plates. My all-time favourite is spinach. This leafy green thrives in most temperate well-drained gardens, defying the seasons, reliably there like an old friend. Continual cutting of the leaves seems to make the foliage more luxuriant, and it’s only when the weather gets really warm that the leaves seem to bolt and produce flowers.
